
if you’re like me, you’ve skipped over any recipe that requires lemon zest. if that describes you, this is the one to start with. you don’t even need a zester. a basic grater with small holes is fine. check out this article, with pictures.
this is a recipe from whole foods. it only makes 18-19, but you might have these ingredients on hand already, they’re so worth making, and they taste like a gourmet cookie! plus, you’ll get omega-3′s from the flaxseed and olive oil. enjoy one or two with a cup of tea!
5 tablespoons olive oil
1/2 cup pure maple syrup
1 teaspoon vanilla extract
1 tablespoon lemon zest (or more if you go grater-happy!)
1 tablespoon lemon or lime juice
1/2 cup ground flaxseed
1 cup brown rice flour
a pinch or two of dried rosemary
1. preheat oven to 350 F.
2. in a mixing bowl, mix all ingredients. stir very well.
3. spoon onto a cookie pan sprayed with nonstick baking spray. use the back of the spoon to flatten and shape cookies into 1/4″-thin rounds.
4. bake at least 20 minutes. when done, the edges will be browned. let cool before removing from the pan.

Yes, I do have all these ingredients on hand. I absolutely love recipes with lemon, lime and/or orange zest, so these are right up my alley. I was also toying with the idea of using half oat flour and half brown rice flour. Not sure yet. I’ll let you know if I make them
